Thier are so many wonderful ways to prepare fish. We do alot of fishing in our family, and being a vegetarian, I really depend on the protien I get from fish. Our favorite way to prepare is breading the fish in 1/2 flour and 1/2 parmesan cheese and deep frying. Light and crispy is the result. Sprinkle a little black or cayenne pepper for a slight kick. YUMMY!
You can also make a yummy beer batter if you have a big meaty fish to work with. Just mix a can of beer with 1/2 teaspoon of baking powder and about a cup of flour. It should be a little thinner then pancake batter. Add a little water until you get the right consistency. Fry in hot oil and serve with a good quality tarter sauce, fresh lemon, or malt vinegar.
Steaming the fish is a much healthier option. I usually put the fish in my steaming basket with garlic, onion, broccoli florets, and season with salt, pepper, and cayenne. It only takes about 10 minutes for a delicious healthy meal. If you do not have a steamer, just fill a pasta pot with a few cups of water and place a metal colander on top and cover. Mmmmm, I want to go fishing!
